I've worked with MediaWiki extensively. I don't know if there was any particular reason why you wanted to investigate different wiki software but I would suggest MediaWiki over most others.
If you need support setting it up, maintaining it, or customizing it, I'm happy to offer help in all those areas.
If you're looking for somebody to maintain it full time then we can discuss that. I have quite a bit of free-time lately and that's something I would be willing to do.
Personally I feel like this is a great idea.

Thank you for the offer! demonnic is our server guy, so I think he'll set it up... but in terms of content and wiki administration/organization, we definitely would need help in that.

I've started adding a bit of content here and there. Mostly i'ts copying what is already in the manual whenever i need to look something up.
I have very little wiki editing experience so i wont even bother trying to make it look good. Hopefully Sanko or another who knows what they're doing can go through and prettify everything.

I've decided that it is good to transition the manual fully to the wiki, that'll be better than copying bits and pieces off it. All of the manual, preferably, still should be one page long - so either as one page, or a concatenation of multiple pages together will do.
If anyone would like to seriously take this up, let me know - I'll freeze the Gobby editing then so new content isn't missed.
