I'd wager to say Mudlet already runs on it, unless they go with ARM as the processor archetecture for their boxes (in which case it'd be a bit of work, but certainly still doable and much closer to porting than Windows-only software).

The only thing is that we aren't in the Steam catalogue itself - so that's where the openness of the platform will come in; can you install apps on it that aren't on Steam?

Vadi, from everything I've been reading on Steam OS; this will be perfectly possible. There's been much to-do about the moddability and ease of changes Steam will be offering.
